We hope that you will enjoy watching as your evening meal is being prepared in our open kitchen.  With Brett’s flair and creativity, each day will offer new culinary treats, from the simplest warm salad dressed to perfection, to artfully arranged desserts combining taste, texture and design.  Many people have asked Brett to define his cooking style, and while you could say the basis is traditional French, you will also notice hints of modern Australian, Italian, British and North American, often combined with an Asian twist.  Sourcing the best produce Canada has to offer is both a passion and a pleasure, and wherever possible ingredients are organic or organically grown.

At breakfast you will choose from a delicious selection of continental items, freshly baked bread and pastries straight out of the oven, Brett's own preserves and lots and lots of great locally roasted coffee or leaf tea. There's also a hot cooked breakfast available on six days out of seven.  When you return from your day on the slopes you will find afternoon tea laid out for you. A new treat awaits you each day and is ready to enjoy with a warming cuppa.

In the evening, join us in the lounge for canapés and wine in front of the open log fire. Dinner is a sumptuous four courses, with wine served during the meal, followed by coffee and homemade petit fours. Once each week we offer a champagne reception to welcome you to Beavertail Lodge. Whilst the menu is ever changing, you are assured that with Brett's passion for food combined with the best fresh local ingredients, every night will be one to remember.

CHILDREN AND BABIES

We are happy to provide separate meals for children aged from two to eleven.

Children's meals are served at 6pm.  Menus might include fish fingers with a baked potato followed by ice cream with bananas and chocolate sauce. Soft drinks or fruit juice are also provided. Children aged twelve and over typically eat with the adults, although this at the parent's discretion.

Baby foods, along with any other requirements such as diapers and formula can be purchased on your behalf.  Please contact us for a list of brands and prices available.

PACKED LUNCHES

These can provided for a small additional charge and can be arranged on arrival

BIRTHDAYS AND SPECIAL REQUESTS

If someone is celebrating a birthday or anniversary in your group, let us know and we will happily arrange something special. If there is s a particular dish or item you would like on your holiday, tell us about it and we will do our best to prepare it for you. The more notice you can give us the better!

SPECIAL DIETARY REQUIREMENTS AND ALLERGIES

We can provide vegetarian meals by prior arrangement. Vegans, celiac and lactose intolerant diets can also be accommodated.  Please let us know in advance of any extreme allergies so that we can ensure the item is removed from the menu entirely.
